Fish With Green Papaya Curry





Ingredients:

6/7 Rohu Fish Pieces
1 medium sized onion, finely chopped
1 tbl spoon ( heaped ) onion paste
3/4 th tea spoon turmeric powder
1 and half tea spoon Chili powder or according to your taste
1/4 th tea spoon coriander powder
Half of a medium sized papaya , cut into thick cubes
Salt to taste
5/6 whole green chilies
Cilantro, chopped
Oil

Method:

1. Rub little turmeric , chili powder and salt on the pieces of fish and keep it aside for half and hour . Then shallow fry them . Take them out from the oil .


2. In the same oil , add the chopped onion . Fry until light brown . Add the onion paste and little water . Add the chili, turmeric powder and salt and cook well adding water little by little . Now add the papaya and cook well . Green papayas take bit longer time to get well done , so what I do , I always steam them for 10-15 minutes or until half done . Then I add the papya to the masala and cook . Now add the fish and enough water .

3. Cook them until comes the desired consistency . Add the whole green chilies and cook on low flame for another 5/ 7 minutes with lid on . At the end add the chopped cilantro and serve hot with plain rice.

Green Peas Chop



Ingredients:

2 cups of frozen peas

1/2 medium onion slice

4 gteen chillis chopped

1 tsp chat mashala

1tbsp chopped coriander leaves

Salt to taste

Oil for fry


Method:

Defors the peas and take paper towelto let it dry.

Now make smooth paste of peas.

Mix all ingredients and make flate ball with peas paste.

Shallow fry it till it become golden brown.

Now serve hot.

Jack Fruit Seed Curry With Raw Mango And Dry Shrimp




Ingredients:

Jack fruit seeds - 10-12 sliced length wise

Raw mango - 1/2 , cut length wise

Dried shrimps - 1/4 cup

Chilly powder - 1 tsp

Turmeric powder - 1/2 tsp

Coconut milk - 1 1/2 cups

For tempering :

Coconut oil - 1 tbsp

Mustard seeds - 1 tsp

Dried red chilly - 1

Curry leaves a handful

Method:

Step 1: First, cook the sliced seeds in nearly 1 cup water. Pressure cooking them would be a good idea. One whistle on high flame and one on low and open the cooker immediately Do not let the seeds to be over cooked as they may break and loose shape.

Step 2: Now drop in the mango slices , if needed , some more water, along with chilly powder and turmeric powder and cook them on medium flame till done.

Step 3: Meanwhile, dry roast the dried shrimps till crispy and after letting it cool, crush them using your food processor. DO NOT POWDER IT. Keep this aside.

Step 4: Now, pour coconut milk into the cooked veggies and cook till it boils and thickens.

Step 5: Finally drop in the crushed dry shrimps and let boil for another minute or 2 for the flavour to fuse in. Add salt to taste.

For tempering, heat oil in a pan. When hot enough, drop in the mustard seeds and let it splutter. Now throw in the dried chilly and curry leaves too.

Pour this over the curry and serve hot with some steaming rice.

Chotpoti (Women,s Day Special )





Ingredients:

  • White pea-1 and 1/2 cup(soaked overnight)
  • Potato-2 medium(grated after boil)
  • Tomato-1 large(finely chopped)
  • Egg-2 (hard boiled and thinly sliced)
  • Cucumber-2 (chopped)
  • Onion-2 medium(chopped)
  • Cumin seed-3 ts
  • Whole red chili -2-3 pieces
  • Whole black pepper-6-7 pieces
  • Green chili-5-6 pieces(chopped)
  • Coriander leaves-1/2 cup(chopped)
  • Tasting salt-1/2 ts(optional)
  • Tamarind-100 gm
  • Turmeric powder-1/2 ts
  • Sugar-1 ts
  • Salt- 1 and 1/2 ts or according to your taste
  • Oil-2 Tbs

Method:

  1. Roast cumin seed,whole red chili and whole black pepper in a hot pan.
  2. Remove from the pan and allow it to cool.
  3. Grind all together and set aside.
  4. Heat oil in a pan.
  5. Add onion and fry until little golden color comes out.
  6. Set aside.
  7. Take a cup of water. 
  8. Add tamarind and boil a little. 
  9. Then add sugar and a pinch of dry roast masala powder. 
  10. Boil another 5 minutes. 
  11. Cool and strain. 
  12. Keep the water portion for juice.
  13. Boil soaked white peas with salt and turmeric powder until tender. 
  14. It should not be too meshed. 
  15. Don't make it full dry. 
  16. There should be little water. 
  17. Add fried onion,potato,tomato,green chili,rest of roast masala powder,tasting salt,2 Tbs tamarind juice and 1/3 portion boiled egg. Mix them thoroughly. 
  18. Cook around 2-3 minutes.
  19. Remove from the pan to a serving bowl. 
  20. Garnish with cucumber,sliced egg and coriander leaves. 
  21. According to your taste you can add little tamarind juice.
